Sally's Apple Chutney

40 MIN • MAKES 4 JARS

YOU WILL NEED:

  • 1.kgs of cooking apples peeled and diced
  • 250g light muscovado sugar
  • 125g raisins
  • 125g chopped dates
  • 2 medium onions finely chopped
  • 3 small dried chillies
  • 2 tsp ground ginger
  • 1 tsp salt
  • 500ml apple cider vinegar

METHOD:

  1. Prepare the ingredients: Gather all the ingredients you need.
  2. Combine ingredients: Place all the ingredients in a large, heavy saucepan.
  3. Start cooking: Set the saucepan over medium heat and bring the mixture to a boil.
  4. Simmer: Once boiling, reduce the heat and let it simmer uncovered. Stir frequently to prevent sticking or burning.
  5. Cook until thick: Continue simmering for 30-40 minutes, or until the mixture becomes thick and pulpy.
  6. Remove from heat: Once the desired consistency is reached, take the saucepan off the heat.
  7. Cool the mixture: Allow the mixture to cool slightly.
  8. Transfer to jars: Pour the cooled mixture into sterilized, clean, and dry jars.
  9. Seal the jars: Seal the jars tightly to preserve the contents.
